I’ve Been growing Annatto for a while now in my garden. I Love the way the plant grows so vigorous and full of life and color. Annatto also regionally known as achiote, achiotillo, bija, urucum, atsuete and especially roucou by our Caribbean brothers and sisters. It can be found in some of the popular snacks and foods we enjoy, such as: Velveeta Mac and cheese, other Orange-colored Cheeses, Cheetos, Goldfish Crackers, Graham Crackers, Certain Seasonings, such as some Cajun seasonings, Some mustards and Some lemon-flavored cookies.
Thing is, most of the quick snack picks are the worse way to consume this super food. Here in St Maarten its time we start to learn and appreciate this achiote tree (Bixa orellana).
I enjoy annatto rice, prepared by the hands of Ms Young, she always finds some creative way to utilize the ingredient and makes it worth wild.
Fresh locally grown annatto is mostly available year round at the St Maarten Agricultural Research and Development Center. We also have some plant in stock or can have them prepared for you on request. The plant does not require much maintenance to thrive, making it a great resistant sustainable crop type for mass production in our climate.
