Nutrition, Are you Healthy? – ECO Learning Week 7

As we come to the final week of the ECO Learning Program, I want to express a heart full of love and joy for those that took advantage to gain the additional knowledge on Agro-Ecology.

As we come to the end of Week 7 where we covered various topics within the scope of nutrition, we took a close look at carbs, proteins, sodium, sugar, alcohol, water, vitamins and minerals, un\saturated fats, calories and how the all play an essential role in the upkeep of a healthy lifestyle. Although you may get carbohydrates from all sources of food, snacks and drinks, this week we learned that not all may be healthy based on the selection of foods we choose to consume. 

Although a soda or sun top may provide you with carbs equivalent to an Apple based on its serving. The calories obtained in order for you to go that extra mile is way more unhealthy by choosing a soda over an apple. The carbs and fiber yo get from an apple play a much more essential role to the body while breaking it down to give you that steady energy flow instead of the high peak and hard fall in the sugary sodas that also contain no dietary fiber. 

We also took a look at how sugar, drugs, alcohol and intimacy play a great role on the mind, which may also influence healthy or unhealthy lifestyle habits. The gut and the mind are connected, so if we feed our bodies well, our minds will be well and mental health is one of the greatest lifestyle achievement to accomplish, as everything else will fall into place after for the better.

After 7 weeks participants were able to harvest salad mix they germinated at the beginning of the program and monitor the progress of the Flint Corn, Bilimbi and Cashew Trees the planted in the first week of the program.

In this final week 8 we look forward to the Culinary Art of Harvesting by preparing cultural traditional meals based on our cultural backgrounds and native countries that we can enjoy along with the salad mix we grew over the past 8 weeks.
